An Easy Oatmeal Cookie Recipe for Busy Moms

Does the weather outside make you want to bake–and eat—an oatmeal cookie? One of the joys of the fall season is baking. There is something magical about the red, yellow, and orange leaves blowing around outside that puts us in the mood to bake. Baking is a simple way to satisfy our nurturing urge. It gives us a lovely warm affirmation that we are taking care of our families and giving them nice things. But it doesn’t always have to be so time consuming.

November is a time to slow down and get ready for Winter. Out come the winter coats, hats, gloves, and quilts. In comes our stock of driveway salt and thick logs for the fireplace. And we start to plan our menus, too: Thanksgiving, holiday parties, and cookie swaps.   

Because many winter cookie recipes are heavy in butter, sugar, flour, and other things that we just want to save for the holidays, we need an easy cookie recipe that keeps things simple.

We want a hearty, healthy cookie. One that satisfies our hunger and warms our home with the smells of autumn spices. That’s where this simple and delicious Anytime Oatmeal Cookie comes in. It’s perfect because…

  • it takes less than 30 minutes,

  •  you already have all the ingredients, and

  • everyone can eat it — kids with nut allergies or your one-year-old!

Anytime Oatmeal Cookies

Ingredients:

  1. An overripe banana* (mashed) *Make sure it has brown spots. The sweetness and binding comes from it.
  2. One apple (peeled and diced)
  3. 1 and 1/2 cups of instant oatmeal
  4. 1/4 teaspoon of cinnamon

1Directions: 

  1. Preheat the oven to 350.
  2. Mix the banana, apple, oatmeal, and cinnamon in a bowl.
  3. Spoon and flatten onto a cookie sheet.
  4. Bake for 15-20 minutes at 350.

This recipe saves time and satisfies everyone’s urge to bake without spoiling tummies or worrying about any added holiday pounds. If you want to add to it, you can include almost anything: a pear, raisins, nuts, cranberries, nutmeg, vanilla, chocolate chips… It’s your call based on what you have in the pantry and who is going to eat it.
